Our challenge started last night when I packed my husband’s lunch after being out of town for the weekend. Thankfully, we had time for a quick trip to the store and he was amenable to whole wheat veggie pita sandwiches. It will be a work in progress finding enough foods to keep him full through a 12 hour shift. Thankfully, he only works a 3 1/2 day week so planning lunches will be sporadic. I work from home and when we are here together we can cook meals we both enjoy and that do not require transport.
My first day went much easier. Breakfast was whole wheat squares with almond milk and blueberries. For lunch, I made a veggie-filled whole wheat pita which was a delicious rainbow of nutrients. Banana peppers gave it a nice kick without the pita getting soggy like it usually does with vinegar.
Dinner was from the Engine 2 Challenge menu; Whole wheat gnocchi with red sauce. I jazzed (yes I said jazzed) it up a bit with some roasted tomatoes, onions and cayenne pepper!
Dessert was banana “ice cream”. I have posted this recipe on my Facebook page but never here. I use a food processor but I am seriously considering a Yonanas Ice Cream Maker! Enjoy!

- 4 medium over-ripe bananas
Optional Toppings (not included in nutritional info):
- chocolate syrup
Peel bananas and place in the freezer until frozen.
When the bananas are frozen, place them through the Yonanas Ice Cream Treat Maker and enjoy alone, or with your favorite topping.
If using a food processor, follow the same steps, and process until smooth.
