Thirsty for Tea

Spring rolls are one of my all-time favorite foods.  I love them anytime of the year, even in the winter and fall.  For lunch, dinner, or even as a light snack, they are always a welcome addition at my table.  Especially as the days get longer and the weather gets warmer, spring rolls become the perfect meal.  These Rainbow Spring Rolls with Sweet & Sour Sauce are delicious enough to suit the taste buds of meat eaters and vegetarians alike, and it’s very possible that even the kiddos might love them too!

In this picture, what you see is my sweet Ru & I, snuggled up happy as can be. What you don’t see is that my best friend was in town visiting me taking care of me because I really hate it when Josh travels for work for a week and I have to hold down the fort with a 2 & 4 year old.

In this picture, what you see are the cutest little girls ever with their beaming proud Momma. What you can’t see is that this was the day after our social worker told us it will probably be a long wait to adopt a baby, longer than we hoped, and I was still processing and grieving that news.

FIT Hits the PAN Friday – Simple Greek Salad

Monday is the start of the Summer Slim-Down Challenge! If you are interested in participating, there is no cost involved. I set up a Facebook page so we can support one another throughout the six weeks. I will be posting recipes and tips to help you shed those unwanted pounds. There are 40 people participating so far so it should be a great challenge!

There is a new, family-owned produce stand about a mile from us. They opened up a week ago and eventually will be a u-pick stand. My husband I stopped by last night and although they didn’t have much we were able to pick up a shopping bag of veggies for $5. I need to find out if they will have organic options as we do try to eat organic as much as possible (especially with fruits and veggies). I threw this salad together last night and not only was it very easy, it is quite tasty! Enjoy!

Simple Greek Salad

(Serves 4-6)

  • 1 small red onion, diced
  • 1 medium tomato, diced
  • 1/4 c. crumbled feta
  • 1/4 c. kalamata olives, diced
  • 1 cucumber, diced
  • balsamic glaze

Combine all the ingredients in a bowl.
Drizzle with balsamic glaze before serving.
